Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 3-4 tablespoons cold water
  • 2 large eggs
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 cup light corn syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped walnuts or pecans (optional)

Instructions:

  1. In a bowl, mix together flour and salt.
  2. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  3. Combine sugar, egg yolk, and cold water; mix until dough forms.
  4. Wrap the dough in plastic wrap and chill for 10 minutes.
  5. Flour a surface and roll out the dough to fit the pie pan.
  6. Transfer the crust to the pie pan, trimming excess dough, and refrigerate while preparing the filling.
  7. In a large mixing bowl, whisk together the eggs, brown sugar, granulated sugar, corn syrup, vanilla, and salt.
  8. Stir in the chocolate chips and nuts, if using.
  9. Preheat the oven to 325°F (160°C).
  10. Pour the filling into the prepared crust.
  11. Bake for 45-50 minutes or until the filling is set and the top is golden brown.
  12. Allow the pie to cool at room temperature before slicing.
