Ingredients:
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ¼ cup granulated sugar
- 1 large egg yolk
- 3-4 tablespoons cold water
- 2 large eggs
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 1 cup light corn syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 cup semi-sweet chocolate chips
- ½ cup chopped walnuts or pecans (optional)
Instructions:
- In a bowl, mix together flour and salt.
- Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
- Combine sugar, egg yolk, and cold water; mix until dough forms.
- Wrap the dough in plastic wrap and chill for 10 minutes.
- Flour a surface and roll out the dough to fit the pie pan.
- Transfer the crust to the pie pan, trimming excess dough, and refrigerate while preparing the filling.
- In a large mixing bowl, whisk together the eggs, brown sugar, granulated sugar, corn syrup, vanilla, and salt.
- Stir in the chocolate chips and nuts, if using.
- Preheat the oven to 325°F (160°C).
- Pour the filling into the prepared crust.
- Bake for 45-50 minutes or until the filling is set and the top is golden brown.
- Allow the pie to cool at room temperature before slicing.
