Ingredients:

  • 10 fl oz (284 ml) Dry Apple Cider, chilled
  • 10 fl oz (284 ml) Light Pale Lager, chilled
  • 1 tsp (5 ml) Blackcurrant Cordial (e.g., Ribena)
  • 1 slice Fresh lime wedge (optional garnish)

Instructions:

  1. Chill Thoroughly: Ensure both the cider and the lager are completely chilled. If time allows, chill the pint glass in the freezer for 5-10 minutes prior to assembly.
  2. Build the Base: Pour 10 fl oz (284 ml) of chilled cider directly into the pint glass. Carefully add the 1 tsp (5 ml) of blackcurrant cordial. Gently stir the base layer until fully incorporated, achieving a ruby colour. Allow the foam to settle completely (approximately 1 minute).
  3. Execute the Layering Technique: Invert a bar spoon or dessert spoon and hold it just above the surface of the cider base, ensuring the tip of the spoon touches the inside wall of the glass.
  4. Pour the Lager: Slowly pour 10 fl oz (284 ml) of the chilled lager over the back of the spoon. The liquid must run down the curve and gently spread across the surface of the cider. If done correctly, the lighter lager will sit visibly on top.
  5. Serve Immediately: Garnish with the lime wedge on the rim and serve straight away while the layers are distinct.
