Ingredients:

  • 6 medium apples, peeled, cored, and sliced (approx 1.5 pounds) – Granny Smith or Honeycrisp
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 2/3 cup all-purpose flour
  • 2/3 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced

Instructions:

  1. Preheat oven to 350°F (175°C) and toss sliced apples with granulated sugar, ground cinnamon, lemon juice, and vanilla extract.
  2. In a separate bowl, combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Add cold diced butter and cut it in with a pastry cutter or fork until coarse crumbs form.
  3. Spread the apple mixture evenly into a 9-inch baking dish and then sprinkle the crisp topping evenly over the apples.
  4. Bake uncovered for 40-45 minutes until the topping is golden brown and the apple juices are bubbling around the edges.
  5. Allow the apple crisp to cool for 10-15 minutes before serving.
