Ingredients:
- 1 pound (450g) ripe tomatoes, preferably heirloom, sliced about 1/4 inch thick
- 8 ounces (225g) fresh mozzarella cheese, ideally buffalo mozzarella, sliced about 1/4 inch thick
- 1/2 cup (packed) fresh basil leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze (store-bought or homemade)
- Sea salt and freshly ground black pepper, to taste
Instructions:
- Gently slice the tomatoes into even 1/4-inch thick slices.
- Slice the mozzarella into slices similar in thickness to the tomatoes.
- On a platter or individual plates, alternate tomato and mozzarella slices, slightly overlapping.
- Tuck fresh basil leaves between the tomato and mozzarella slices.
- Drizzle with extra virgin olive oil and balsamic glaze. Season generously with sea salt and freshly ground black pepper.
- For the best flavor and texture, serve immediately. (Though a short rest allows the flavors to meld.)
