Ingredients:

  • 1 pound (450g) ripe tomatoes, preferably heirloom, sliced about 1/4 inch thick
  • 8 ounces (225g) fresh mozzarella cheese, ideally buffalo mozzarella, sliced about 1/4 inch thick
  • 1/2 cup (packed) fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (store-bought or homemade)
  • Sea salt and freshly ground black pepper, to taste

Instructions:

  1. Gently slice the tomatoes into even 1/4-inch thick slices.
  2. Slice the mozzarella into slices similar in thickness to the tomatoes.
  3. On a platter or individual plates, alternate tomato and mozzarella slices, slightly overlapping.
  4. Tuck fresh basil leaves between the tomato and mozzarella slices.
  5. Drizzle with extra virgin olive oil and balsamic glaze. Season generously with sea salt and freshly ground black pepper.
  6. For the best flavor and texture, serve immediately. (Though a short rest allows the flavors to meld.)
