Ingredients:

  • 6 medium fresh peaches, halved and pitted (approx. 3 lbs / 1.36 kg)
  • 1 tbsp fresh lemon juice
  • 1/2 cup packed light brown sugar
  • 4 tbsp unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt

Instructions:

  1. Slice the peaches in half and remove the pits. Slice a tiny sliver off the rounded bottom of each half so they sit completely flat in the dish.
  2. Brush the cut sides of the peach halves lightly with lemon juice to prevent oxidation and maintain color.
  3. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, vanilla, and salt until a smooth, thick paste forms.
  4. Spoon a generous amount of the cinnamon-sugar mixture into the center of each peach half, spreading it slightly toward the edges.
  5. Cook using one of the following methods: Bake at 375°F (190°C) for 20-25 minutes; Grill cut-side down for 4-5 minutes, then flip and add glaze for 3-5 minutes; Air fry at 350°F (175°C) for 10-12 minutes; or sear in a skillet and deglaze with the sugar mixture.
  6. Remove from heat and let the peaches rest for 5 minutes to allow the residual heat to thicken the syrup into a glossy glaze.
