Ingredients:
- 1 cup (90g) rolled oats
- 1 cup (150g) granulated sugar
- ½ cup (120ml) unsweetened cocoa powder
- ½ cup (120ml) unsalted butter
- ½ cup (120ml) milk
- 1 tsp (5ml) vanilla extract
- ¼ cup (60g) peanut butter (optional, for creaminess)
Instructions:
- In a medium saucepan, mix together sugar, cocoa powder, butter, and milk.
- Bring the mixture to a boil over medium heat.
- Boil for 1-2 minutes until bubbly.
- Remove from heat and stir in rolled oats and vanilla extract.
- Add peanut butter if using, and mix until well combined.
- Drop spoonfuls of the mixture onto wax paper or a baking sheet.
- Refrigerate for 30 minutes, or until set.
- Enjoy these cookies after they have chilled and firmed up.
