Ingredients:

  • 1 cup (90g) rolled oats
  • 1 cup (150g) granulated sugar
  • ½ cup (120ml) unsweetened cocoa powder
  • ½ cup (120ml) unsalted butter
  • ½ cup (120ml) milk
  • 1 tsp (5ml) vanilla extract
  • ¼ cup (60g) peanut butter (optional, for creaminess)

Instructions:

  1. In a medium saucepan, mix together sugar, cocoa powder, butter, and milk.
  2. Bring the mixture to a boil over medium heat.
  3. Boil for 1-2 minutes until bubbly.
  4. Remove from heat and stir in rolled oats and vanilla extract.
  5. Add peanut butter if using, and mix until well combined.
  6. Drop spoonfuls of the mixture onto wax paper or a baking sheet.
  7. Refrigerate for 30 minutes, or until set.
  8. Enjoy these cookies after they have chilled and firmed up.
