Ingredients:

  • 1 cup fresh parsley, finely chopped (about 60g)
  • 1/4 cup fresh oregano leaves, finely chopped (about 15g)
  • 4 cloves garlic, minced
  • 1/2 cup olive oil (120ml)
  • 1/4 cup red wine vinegar (60ml)
  • 1 teaspoon red pepper flakes (adjust for spice level)
  • Salt and black pepper to taste
  • Juice of 1 lemon (optional, for extra acidity)

Instructions:

  1. Finely chop the parsley and oregano leaves. Mince the garlic cloves.
  2. In a mixing bowl, add the chopped parsley, oregano, and minced garlic.
  3. Pour in the olive oil and red wine vinegar.
  4. Add red pepper flakes, salt, and black pepper. Squeeze in lemon juice if desired.
  5. Use a whisk or fork to combine all ingredients until well blended. Taste and adjust seasoning as necessary.
  6. Transfer chimichurri to an airtight container. Let it sit for at least 30 minutes for flavors to meld.
