Ingredients:
- 1 cup fresh parsley, finely chopped (about 60g)
- 1/4 cup fresh oregano leaves, finely chopped (about 15g)
- 4 cloves garlic, minced
- 1/2 cup olive oil (120ml)
- 1/4 cup red wine vinegar (60ml)
- 1 teaspoon red pepper flakes (adjust for spice level)
- Salt and black pepper to taste
- Juice of 1 lemon (optional, for extra acidity)
Instructions:
- Finely chop the parsley and oregano leaves. Mince the garlic cloves.
- In a mixing bowl, add the chopped parsley, oregano, and minced garlic.
- Pour in the olive oil and red wine vinegar.
- Add red pepper flakes, salt, and black pepper. Squeeze in lemon juice if desired.
- Use a whisk or fork to combine all ingredients until well blended. Taste and adjust seasoning as necessary.
- Transfer chimichurri to an airtight container. Let it sit for at least 30 minutes for flavors to meld.
