Ingredients:

  • 4 ears of fresh sweet corn, husks and silk removed
  • 1 tbsp vegetable oil or melted butter
  • 1 pinch kosher salt
  • 1/4 cup high-quality mayonnaise
  • 2 tbsp Mexican Crema or sour cream
  • 1 tsp chili powder
  • 1 tbsp freshly squeezed lime juice
  • 1/2 tsp garlic powder
  • 1/2 cup Cotija cheese, finely crumbled
  • 2 tbsp fresh cilantro, finely chopped
  • 1/4 tsp smoked paprika

Instructions:

  1. Lightly coat each ear of corn with vegetable oil or melted butter and a pinch of salt to ensure even browning.
  2. Preheat your grill to medium-high heat. Place corn directly on the grates and grill for 12–15 minutes, turning every 3 minutes, until tender and deep golden-brown char marks appear.
  3. While the corn is roasting, whisk the mayonnaise, Mexican crema, lime juice, garlic powder, and chili powder in a small bowl until the sauce is smooth.
  4. Remove the hot corn from the grill. Use a basting brush to coat each ear generously with the prepared lime crema sauce.
  5. Roll the coated corn in the crumbled Cotija cheese and finish with a dusting of smoked paprika and fresh cilantro.
