Ingredients:
- 4 ears of fresh sweet corn, husks and silk removed
- 1 tbsp vegetable oil or melted butter
- 1 pinch kosher salt
- 1/4 cup high-quality mayonnaise
- 2 tbsp Mexican Crema or sour cream
- 1 tsp chili powder
- 1 tbsp freshly squeezed lime juice
- 1/2 tsp garlic powder
- 1/2 cup Cotija cheese, finely crumbled
- 2 tbsp fresh cilantro, finely chopped
- 1/4 tsp smoked paprika
Instructions:
- Lightly coat each ear of corn with vegetable oil or melted butter and a pinch of salt to ensure even browning.
- Preheat your grill to medium-high heat. Place corn directly on the grates and grill for 12–15 minutes, turning every 3 minutes, until tender and deep golden-brown char marks appear.
- While the corn is roasting, whisk the mayonnaise, Mexican crema, lime juice, garlic powder, and chili powder in a small bowl until the sauce is smooth.
- Remove the hot corn from the grill. Use a basting brush to coat each ear generously with the prepared lime crema sauce.
- Roll the coated corn in the crumbled Cotija cheese and finish with a dusting of smoked paprika and fresh cilantro.
