Ingredients:
- 3 cups (450g) shredded cooked chicken thighs
- 1/2 cup (120g) plain Greek yogurt
- 4 oz (115g) light cream cheese, softened
- 1 cup (115g) shredded sharp cheddar cheese
- 1/2 tsp (2g) garlic powder
- 1/4 tsp (1g) smoked paprika
- 2 tbsp (30ml) chopped green onions
- 2 cups (60g) crushed plain potato chips
- 2 tbsp (30g) unsalted butter, melted
- 1/2 cup (55g) grated Parmesan cheese
Instructions:
- In a large bowl, whisk together the Greek yogurt, softened cream cheese, garlic powder, and smoked paprika until smooth.
- Fold in the shredded chicken and 1 cup of cheddar cheese until the chicken is evenly coated in the velvety mixture.
- Stir in the chopped green onions, ensuring they are distributed throughout the base.
- Gently crush the potato chips into irregular pieces.
- Mix the crushed chips with melted butter and grated Parmesan cheese until the chips are lightly glistening.
- Spread the chicken mixture evenly into a 9x9 inch baking dish, smoothing the top with a spatula.
- Sprinkle the chip mixture over the chicken in a dense, even layer.
- Bake in a preheated oven at 375°F (190°C) for 20–25 minutes until the edges are bubbling and the topping is deep mahogany-gold.
