Ingredients:

  • 3 cups (450g) shredded cooked chicken thighs
  • 1/2 cup (120g) plain Greek yogurt
  • 4 oz (115g) light cream cheese, softened
  • 1 cup (115g) shredded sharp cheddar cheese
  • 1/2 tsp (2g) garlic powder
  • 1/4 tsp (1g) smoked paprika
  • 2 tbsp (30ml) chopped green onions
  • 2 cups (60g) crushed plain potato chips
  • 2 tbsp (30g) unsalted butter, melted
  • 1/2 cup (55g) grated Parmesan cheese

Instructions:

  1. In a large bowl, whisk together the Greek yogurt, softened cream cheese, garlic powder, and smoked paprika until smooth.
  2. Fold in the shredded chicken and 1 cup of cheddar cheese until the chicken is evenly coated in the velvety mixture.
  3. Stir in the chopped green onions, ensuring they are distributed throughout the base.
  4. Gently crush the potato chips into irregular pieces.
  5. Mix the crushed chips with melted butter and grated Parmesan cheese until the chips are lightly glistening.
  6. Spread the chicken mixture evenly into a 9x9 inch baking dish, smoothing the top with a spatula.
  7. Sprinkle the chip mixture over the chicken in a dense, even layer.
  8. Bake in a preheated oven at 375°F (190°C) for 20–25 minutes until the edges are bubbling and the topping is deep mahogany-gold.
