Ingredients:

  • 2 cups (180g) rolled oats
  • 1 cup (120g) raw almonds, chopped (or nut of choice)
  • 1/2 cup (75g) honey or maple syrup
  • 1/4 cup (60ml) unsweetened nut butter (e.g., almond or peanut)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup (90g) chocolate chips (or dried fruit, if preferred)
  • Optional: 1/4 cup (30g) chia seeds or flaxseeds for added nutrition

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line the baking tray with parchment paper, leaving an overhang for easy removal.
  3. In a mixing bowl, combine oats, chopped almonds, and salt.
  4. In a small saucepan, gently heat honey/maple syrup and nut butter until melted and combined. Stir in vanilla extract.
  5. Pour the wet mixture over the oat mixture; stir until fully combined.
  6. Fold in chocolate chips or dried fruit.
  7. Transfer the mixture to the prepared baking tray; press down firmly into an even layer.
  8. Bake for 15 minutes, until the edges are golden brown.
  9. Let cool in the tray for 10 minutes, then transfer to the fridge to chill for at least 30 minutes.
  10. Cut into bars and store in an airtight container.
