Ingredients:
- 2 cups (180g) rolled oats
- 1 cup (120g) raw almonds, chopped (or nut of choice)
- 1/2 cup (75g) honey or maple syrup
- 1/4 cup (60ml) unsweetened nut butter (e.g., almond or peanut)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup (90g) chocolate chips (or dried fruit, if preferred)
- Optional: 1/4 cup (30g) chia seeds or flaxseeds for added nutrition
Instructions:
- Preheat the oven to 350°F (175°C).
- Line the baking tray with parchment paper, leaving an overhang for easy removal.
- In a mixing bowl, combine oats, chopped almonds, and salt.
- In a small saucepan, gently heat honey/maple syrup and nut butter until melted and combined. Stir in vanilla extract.
- Pour the wet mixture over the oat mixture; stir until fully combined.
- Fold in chocolate chips or dried fruit.
- Transfer the mixture to the prepared baking tray; press down firmly into an even layer.
- Bake for 15 minutes, until the edges are golden brown.
- Let cool in the tray for 10 minutes, then transfer to the fridge to chill for at least 30 minutes.
- Cut into bars and store in an airtight container.
