Ingredients:
- 2 lbs zucchini, grated
- 1 tsp kosher salt
- 1/2 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup sharp cheddar cheese, shredded
- 1 large egg, beaten
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Grate the zucchini into a bowl and toss with salt. Let it sit for 10 minutes to draw out moisture.
- Wrap the grated zucchini in a cheesecloth or clean kitchen towel and squeeze firmly over the sink until no more liquid escapes and the zucchini feels like a dry ball of pulp.
- In a large bowl, combine the squeezed zucchini, beaten egg, Parmesan, cheddar, minced garlic, and seasonings.
- Fold in the Panko breadcrumbs, stirring until the mixture holds together when pressed.
- For Oven: Preheat oven to 400°F (200°C). Scoop tablespoon-sized portions onto a parchment-lined sheet, flatten slightly, and bake for 18–22 minutes until edges are mahogany-colored.
- For Air Fryer: Preheat air fryer to 375°F (190°C). Place bites in a single layer and air fry for 8–12 minutes, flipping halfway through, until golden and crisp.
