Ingredients:

  • 2 lbs zucchini, grated
  • 1 tsp kosher salt
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup sharp cheddar cheese, shredded
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Grate the zucchini into a bowl and toss with salt. Let it sit for 10 minutes to draw out moisture.
  2. Wrap the grated zucchini in a cheesecloth or clean kitchen towel and squeeze firmly over the sink until no more liquid escapes and the zucchini feels like a dry ball of pulp.
  3. In a large bowl, combine the squeezed zucchini, beaten egg, Parmesan, cheddar, minced garlic, and seasonings.
  4. Fold in the Panko breadcrumbs, stirring until the mixture holds together when pressed.
  5. For Oven: Preheat oven to 400°F (200°C). Scoop tablespoon-sized portions onto a parchment-lined sheet, flatten slightly, and bake for 18–22 minutes until edges are mahogany-colored.
  6. For Air Fryer: Preheat air fryer to 375°F (190°C). Place bites in a single layer and air fry for 8–12 minutes, flipping halfway through, until golden and crisp.
