Ingredients:
- 1 ½ cups (192g) all-purpose flour
- 1 teaspoon (5g) baking powder
- ½ teaspoon (2.5g) baking soda
- ½ teaspoon (3g) salt
- 1 cup (240ml) buttermilk (or milk mixed with 1 tablespoon of lemon juice/vinegar)
- 2 large eggs
- ¼ cup (60ml) melted unsalted butter
- 2 cloves garlic, minced (approx. 1 teaspoon)
- ¼ cup (60ml) grated Parmesan cheese
- ½ cup (50g) shredded cheddar cheese (or your favourite melting cheese)
Instructions:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, eggs, and melted butter. Stir in the minced garlic.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix! A few lumps are okay.
- Gently fold in the Parmesan and cheddar cheese.
- Lightly grease the preheated waffle iron. Pour the batter onto the hot waffle iron, using the amount recommended by your waffle iron's instructions.
- Cook according to your waffle iron's instructions, until golden brown and crispy.
- Carefully remove the waffles from the iron and serve immediately with your favourite toppings.
