Ingredients:
- 1 cup All-Purpose Flour
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 4 oz Full-Fat Cream Cheese, softened
- 1/2 cup Unsalted Butter, softened
- 1/2 cup Granulated Sugar
- 1/4 cup Packed Brown Sugar
- 1 Large Egg
- 1 tsp Vanilla Extract
- 1 1/2 cups Crushed Sandwich Cookies (Oreos are best)
- 1/2 cup Whole Sandwich Cookies (Roughly Chopped)
Instructions:
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In the bowl of a stand mixer, beat the softened cream cheese and unsalted butter until smooth and creamy. Add the granulated sugar and packed brown sugar and continue mixing until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until just combined. Gradually add the dry flour mixture, mixing on low speed until the dough just comes together. Do not overmix.
- Gently fold in the crushed and chopped chocolate sandwich cookies. Cover the dough tightly and chill in the refrigerator for a minimum of 45 minutes to prevent spreading during baking.
- Preheat oven to 350°F (175°C). Scoop rounded spoonfuls of cold dough onto a baking sheet lined with parchment paper. Bake for 12 to 15 minutes, or until the edges are set and lightly golden brown. The centers should still look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
