Ingredients:

  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 4 oz Full-Fat Cream Cheese, softened
  • 1/2 cup Unsalted Butter, softened
  • 1/2 cup Granulated Sugar
  • 1/4 cup Packed Brown Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Crushed Sandwich Cookies (Oreos are best)
  • 1/2 cup Whole Sandwich Cookies (Roughly Chopped)

Instructions:

  1. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  2. In the bowl of a stand mixer, beat the softened cream cheese and unsalted butter until smooth and creamy. Add the granulated sugar and packed brown sugar and continue mixing until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until just combined. Gradually add the dry flour mixture, mixing on low speed until the dough just comes together. Do not overmix.
  4. Gently fold in the crushed and chopped chocolate sandwich cookies. Cover the dough tightly and chill in the refrigerator for a minimum of 45 minutes to prevent spreading during baking.
  5. Preheat oven to 350°F (175°C). Scoop rounded spoonfuls of cold dough onto a baking sheet lined with parchment paper. Bake for 12 to 15 minutes, or until the edges are set and lightly golden brown. The centers should still look slightly soft.
  6. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
