Ingredients:
- 4 cups mixed salad greens (e.g., arugula, spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1 avocado, diced
- ½ cup radishes, thinly sliced
- ½ cup cooked chickpeas (drained and rinsed)
- ½ cup Greek yogurt (or dairy-free alternative)
- 2 tablespoons mayonnaise (or vegan mayo)
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- ¼ cup fresh parsley, chopped
- ¼ cup fresh chives, chopped
- ¼ cup fresh basil, chopped
- Salt and pepper, to taste
Instructions:
- Wash and dry salad greens; tear into bite-sized pieces.
- Halve cherry tomatoes and slice cucumber, radishes, and avocado.
- Rinse and drain chickpeas.
- In a mixing bowl, combine Greek yogurt and mayonnaise.
- Add minced garlic, lemon juice, parsley, chives, and basil. Whisk until smooth; season with salt and pepper to taste.
- In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, radishes, avocado, and chickpeas.
- Drizzle with dressing and toss gently to combine.
- Divide salad among individual plates or bowls. Add extra dressing as desired and enjoy!
