Ingredients:

  • 4 cups mixed salad greens (e.g., arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1 avocado, diced
  • ½ cup radishes, thinly sliced
  • ½ cup cooked chickpeas (drained and rinsed)
  • ½ cup Greek yogurt (or dairy-free alternative)
  • 2 tablespoons mayonnaise (or vegan mayo)
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh chives, chopped
  • ¼ cup fresh basil, chopped
  • Salt and pepper, to taste

Instructions:

  1. Wash and dry salad greens; tear into bite-sized pieces.
  2. Halve cherry tomatoes and slice cucumber, radishes, and avocado.
  3. Rinse and drain chickpeas.
  4. In a mixing bowl, combine Greek yogurt and mayonnaise.
  5. Add minced garlic, lemon juice, parsley, chives, and basil. Whisk until smooth; season with salt and pepper to taste.
  6. In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, radishes, avocado, and chickpeas.
  7. Drizzle with dressing and toss gently to combine.
