Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • ½ cup buttermilk (or ½ cup milk + ½ tsp lemon juice)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup mixed colorful sprinkles
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • Food coloring (optional)
  • Additional colorful sprinkles for decoration

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with cooking spray or line it with parchment paper for easy removal.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy (about 3-5 minutes).
  4. Add in the eggs one at a time, mixing well after each addition. Then add the vanilla extract and mix to combine.
  5. Gradually add the dry ingredients to the butter-sugar mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined; do not overmix.
  6. Gently fold in the colorful sprinkles until evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, remove from the oven and let the cake cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  9. In a clean mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined. Then, increase the speed and beat until fluffy. Add milk and vanilla extract (and food coloring if using) to reach desired consistency and color.
  10. Once the cake is completely cool, cut it into 24 small bites (1.5-inch squares). Frost each bite generously using a spatula or piping bag.
  11. Sprinkle additional colorful sprinkles on top of the frosted bites for decoration.
  12. Arrange the bites on a serving platter and enjoy!
