Ingredients:

  • 2 cups (240g) all-purpose flour, sifted
  • 1 ½ cups (300g) granulated sugar
  • 1 cup (227g) unsalted butter, softened to room temperature
  • 4 large eggs (about 227g)
  • 1 cup (240ml) whole milk
  • 2 teaspoons (10ml) vanilla extract
  • 1 tablespoon (15g) baking powder
  • ½ teaspoon (2g) salt
  • Powdered sugar for dusting
  • Fresh berries or whipped cream

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan or cake pans with butter and lightly flour, or line the bottom with parchment paper.
  3. In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
  4. In another bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes).
  5. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  7. Transfer the batter into the prepared pan(s) and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Dust with powdered sugar if desired, and serve with fresh berries or whipped cream.
