Ingredients:
- 1 lb (450g) Italian-style pork sausages
- 2 large (300g) bell peppers, sliced into thick strips
- 1 large (150g) yellow onion, sliced into wedges
- 2 tbsp (30ml) olive oil
- 1 tsp (2g) dried oregano
- 1/2 tsp (1g) garlic powder
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
Instructions:
- Toss the sliced peppers and onions in a large bowl with the olive oil, oregano, garlic powder, salt, and pepper until lightly coated.
- Preheat the grill to medium-high heat.
- Place the sausages on the grate, turning every 3-4 minutes until the exterior is mahogany-colored and the internal temperature reaches 160°F (71°C).
- Simultaneously grill the vegetables in a grill basket or directly on the grates until edges are charred and vegetables are tender-crisp.
- Remove from heat and let the sausages rest for 5 minutes to allow juices to redistribute before serving on a platter with the charred vegetables.
