Ingredients:

  • 1 lb (450g) Italian-style pork sausages
  • 2 large (300g) bell peppers, sliced into thick strips
  • 1 large (150g) yellow onion, sliced into wedges
  • 2 tbsp (30ml) olive oil
  • 1 tsp (2g) dried oregano
  • 1/2 tsp (1g) garlic powder
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Toss the sliced peppers and onions in a large bowl with the olive oil, oregano, garlic powder, salt, and pepper until lightly coated.
  2. Preheat the grill to medium-high heat.
  3. Place the sausages on the grate, turning every 3-4 minutes until the exterior is mahogany-colored and the internal temperature reaches 160°F (71°C).
  4. Simultaneously grill the vegetables in a grill basket or directly on the grates until edges are charred and vegetables are tender-crisp.
  5. Remove from heat and let the sausages rest for 5 minutes to allow juices to redistribute before serving on a platter with the charred vegetables.
