Ingredients:

  • 1 cup (227g) Unsalted Butter, softened
  • 1 ½ cups (180g) Creamy Peanut Butter (not natural)
  • 4 ½ cups (540g) Powdered Sugar, sifted
  • 1 teaspoon (5ml) Vanilla Extract
  • ½ teaspoon (2.5ml) Salt
  • 12 ounces (340g) Semi-Sweet Chocolate Chips
  • 2 tablespoons (30ml) Shortening (or coconut oil)

Instructions:

  1. Cream together the softened butter and peanut butter until smooth.
  2. Gradually add the powdered sugar, vanilla extract, and salt to the butter mixture. Mix until well combined.
  3. Cover the dough and refrigerate for at least 1 hour to make it easier to handle.
  4. Roll the chilled dough into small balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
  5. Refrigerate the peanut butter balls for another 15-20 minutes to firm them up further.
  6. Melt the chocolate chips and shortening (or coconut oil) in a double boiler or microwave in 30-second intervals, stirring until smooth.
  7. Insert a toothpick into each peanut butter ball and dip it into the melted chocolate, leaving a small circle of peanut butter exposed at the top.
  8. Place the dipped Buckeyes back on the parchment-lined baking sheet.
  9. Before the chocolate sets completely, remove the toothpicks. Smooth over the hole with a small spatula or your finger.
  10. Refrigerate until the chocolate is completely set, about 15-20 minutes.
