Ingredients:

  • 2 tablespoons granulated sugar
  • 1 tablespoon salt
  • 2 medium red onions, thinly sliced

Instructions:

  1. Slice the red onions thinly using a sharp knife or a mandoline. Place sliced onions in a mixing bowl.
  2. In a medium saucepan, combine white vinegar, water, sugar, and salt. Heat over medium until sugar and salt fully dissolve, stirring occasionally.
  3. Pour the hot brine over the sliced onions in the bowl. Give a gentle toss to ensure onions are well coated.
  4. Let the mixture sit at room temperature for about 10 minutes. Transfer the onions and brine into a canning jar or airtight container. Seal and refrigerate for at least 30 minutes before serving.
  5. Use pickled onions as a condiment or topping for various dishes!
