Ingredients:

- 1 cup water
- 2 tablespoons granulated sugar
- 1 tablespoon salt
- 2 medium red onions, thinly sliced
Instructions:
- Slice the red onions thinly using a sharp knife or a mandoline. Place sliced onions in a mixing bowl.
- In a medium saucepan, combine white vinegar, water, sugar, and salt. Heat over medium until sugar and salt fully dissolve, stirring occasionally.
- Pour the hot brine over the sliced onions in the bowl. Give a gentle toss to ensure onions are well coated.
- Let the mixture sit at room temperature for about 10 minutes. Transfer the onions and brine into a canning jar or airtight container. Seal and refrigerate for at least 30 minutes before serving.
