Ingredients:
- 2 (6-8 ounce / 170-225g) salmon fillets, skin on or off
- 1 (5.2 ounce / 150g) package Boursin cheese, garlic & fine herbs flavour
- 1 tablespoon (15ml) olive oil
- 1 tablespoon (15ml) lemon juice, freshly squeezed
- 1/4 teaspoon (1.25ml) black pepper, freshly ground
- Optional garnish: Fresh parsley or dill, chopped
Instructions:
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper or foil. Place salmon fillets on the baking sheet.
- In a small bowl, soften Boursin cheese with a fork until creamy and spreadable.
- Drizzle salmon fillets with olive oil and lemon juice. Season with black pepper.
- Spread the softened Boursin cheese evenly over the top of each salmon fillet.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Check for doneness around the 15-minute mark to avoid overcooking. Salmon is cooked through when internal temp reaches 145F.
- Garnish with fresh parsley or dill (optional). Serve immediately.
