Ingredients:

  • 2 (6-8 ounce / 170-225g) salmon fillets, skin on or off
  • 1 (5.2 ounce / 150g) package Boursin cheese, garlic & fine herbs flavour
  • 1 tablespoon (15ml) olive oil
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1/4 teaspoon (1.25ml) black pepper, freshly ground
  • Optional garnish: Fresh parsley or dill, chopped

Instructions:

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper or foil. Place salmon fillets on the baking sheet.
  2. In a small bowl, soften Boursin cheese with a fork until creamy and spreadable.
  3. Drizzle salmon fillets with olive oil and lemon juice. Season with black pepper.
  4. Spread the softened Boursin cheese evenly over the top of each salmon fillet.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Check for doneness around the 15-minute mark to avoid overcooking. Salmon is cooked through when internal temp reaches 145F.
  6. Garnish with fresh parsley or dill (optional). Serve immediately.
