Ingredients:
- 1.5 lbs ground beef (80/20 lean-to-fat ratio)
- 1 tsp kosher salt
- 1 tsp cracked black pepper
- 1 tbsp neutral oil
- 4 brioche buns
- 2 tbsp unsalted butter, softened
- 1/2 cup mayonnaise
- 1 tbsp tomato paste
- 1 tsp apple cider vinegar
- 2 tbsp finely diced dill pickles
Instructions:
- Divide the beef into 4 equal portions and gently roll them into loose balls (about 6 oz each) without overworking the meat.
- Whisk together mayonnaise, tomato paste, vinegar, and diced pickles in a small bowl and set aside.
- Spread softened butter evenly on the cut sides of the brioche buns.
- Heat the Blackstone griddle to high heat until water evaporates instantly upon contact.
- Apply neutral oil to the griddle surface and place the beef balls on the heat, leaving space between them.
- Place a square of parchment paper over each ball and press down with maximum force using a spatula or burger press for 10 seconds until approximately 1/4 inch thick.
- Season the patties generously with salt and pepper and sear undisturbed to develop the crust.
