Ingredients:

  • 1.5 lbs ground beef (80/20 lean-to-fat ratio)
  • 1 tsp kosher salt
  • 1 tsp cracked black pepper
  • 1 tbsp neutral oil
  • 4 brioche buns
  • 2 tbsp unsalted butter, softened
  • 1/2 cup mayonnaise
  • 1 tbsp tomato paste
  • 1 tsp apple cider vinegar
  • 2 tbsp finely diced dill pickles

Instructions:

  1. Divide the beef into 4 equal portions and gently roll them into loose balls (about 6 oz each) without overworking the meat.
  2. Whisk together mayonnaise, tomato paste, vinegar, and diced pickles in a small bowl and set aside.
  3. Spread softened butter evenly on the cut sides of the brioche buns.
  4. Heat the Blackstone griddle to high heat until water evaporates instantly upon contact.
  5. Apply neutral oil to the griddle surface and place the beef balls on the heat, leaving space between them.
  6. Place a square of parchment paper over each ball and press down with maximum force using a spatula or burger press for 10 seconds until approximately 1/4 inch thick.
  7. Season the patties generously with salt and pepper and sear undisturbed to develop the crust.
