Ingredients:
- 1/2 cup chia seeds (90g)
- 2 cups almond milk (500ml) or any plant-based milk
- 2 tablespoons honey or maple syrup (30ml)
- 1 teaspoon vanilla extract (5ml)
- 1 cup mixed berries (strawberries, blueberries, raspberries) (150g)
- 1 tablespoon shredded coconut (optional) (15g)
- Mint leaves for garnish (optional)
Instructions:
- In a mixing bowl, combine chia seeds, almond milk, honey (or maple syrup), and vanilla extract. Whisk until well combined and no lumps remain.
- Cover the bowl with plastic wrap. Refrigerate for at least 20 minutes (or overnight) until it thickens.
- Once the pudding has thickened, stir it to remove any clumps. Layer the chia pudding in jars or bowls with fresh berries. Top with shredded coconut and mint leaves if desired.
- Enjoy immediately or store in the fridge for up to 3 days.
