Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.5 cup low-sugar BBQ sauce
  • 1 tsp liquid smoke

Instructions:

  1. Preheat your oven to 400°F (200°C). Place the chicken breasts between two sheets of plastic wrap and gently pound the thickest parts until the entire breast is an even 1-inch thickness. Pat the meat bone-dry with paper towels.
  2. Rub the chicken with apple cider vinegar, then coat evenly on all sides with the smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
  3. Place the chicken in a 9x13 inch ceramic or glass baking dish. Roast in the center rack for 12–15 minutes.
  4. Remove the dish from the oven and brush a generous layer of low-sugar BBQ sauce over each breast. Return to the oven for 5 minutes.
  5. Turn the oven to Broil for the final 2–3 minutes until the sauce is bubbling and mahogany in color. Ensure the internal temperature reaches 165°F before removing.
