Ingredients:
- 1 cup (125g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 tablespoon (15g) baking powder
- ½ teaspoon (2g) salt
- 1 large egg (50g)
- 1 cup (240ml) milk (dairy or non-dairy)
- 2 ripe bananas (about 200g), mashed
- 2 tablespoons (28g) unsalted butter, melted (plus extra for cooking)
- 1 teaspoon (5ml) vanilla extract
- ½ teaspoon (2g) ground cinnamon (optional)
Instructions:
- Mash the ripe bananas in a bowl until smooth. Set aside.
- In a separate bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients; gently fold in the mashed bananas. Mix until just combined—small lumps are okay.
- Preheat a frying pan or griddle over medium heat and coat with a little butter.
- Pour ¼ cup (60ml) of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes).
- Flip and cook until golden brown on the other side (about 1-2 minutes).
- Serve the pancakes warm, topped with maple syrup, banana slices, or any preferred toppings.
