Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (15g) baking powder
  • ½ teaspoon (2g) salt
  • 1 large egg (50g)
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 2 ripe bananas (about 200g), mashed
  • 2 tablespoons (28g) unsalted butter, melted (plus extra for cooking)
  • 1 teaspoon (5ml) vanilla extract
  • ½ teaspoon (2g) ground cinnamon (optional)

Instructions:

  1. Mash the ripe bananas in a bowl until smooth. Set aside.
  2. In a separate bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the egg, milk, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients; gently fold in the mashed bananas. Mix until just combined—small lumps are okay.
  5. Preheat a frying pan or griddle over medium heat and coat with a little butter.
  6. Pour ¼ cup (60ml) of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes).
  7. Flip and cook until golden brown on the other side (about 1-2 minutes).
  8. Serve the pancakes warm, topped with maple syrup, banana slices, or any preferred toppings.
