Ingredients:

  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Balsamic Vinegar
  • 2 tablespoons Dijon Mustard
  • 1 to 2 tablespoons liquid Honey
  • 1 small clove Garlic, minced very finely
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper, freshly ground

Instructions:

  1. If using fresh garlic, mince it as finely as possible or mash the clove with the side of a knife against a cutting board until it forms a paste.
  2. In a mixing bowl, combine the balsamic vinegar, Dijon mustard, honey, minced garlic (or paste), salt, and pepper. Whisk these ingredients vigorously until they are thoroughly incorporated.
  3. Begin whisking the mixture constantly. Very slowly begin drizzling in the olive oil in a thin, steady stream. Continue whisking without stopping until the mixture thickens and lightens in colour, forming an emulsion.
  4. Once all the oil is incorporated, stop whisking. Taste the dressing and adjust seasoning as needed (add more salt, honey, or vinegar to achieve the perfect balance).
  5. If time allows, cover the dressing and let it sit in the fridge for at least 30 minutes to allow the flavours to deepen. Give it one final quick whisk or shake before serving.
