Ingredients:

  • ¼ cup (60 ml) Balsamic Vinegar
  • 2 tablespoons (30 ml) Olive Oil, extra virgin
  • 2 cloves Garlic, minced (about 2 teaspoons)
  • 1 tablespoon (15 ml) Brown Sugar, packed (light or dark)
  • 1 teaspoon Dried Italian Herbs
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper, freshly ground
  • 4 boneless, skinless Chicken Breasts (about 6-8 oz / 170-225g each)
  • 4 oz (115g) Fresh Mozzarella Cheese, sliced
  • 2 tablespoons Fresh Basil, chopped, for garnish (optional)

Instructions:

  1. In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, brown sugar, Italian herbs, salt, and pepper until well combined.
  2. Place chicken breasts in a ziplock bag or baking dish. Pour the balsamic marinade over the chicken, ensuring each breast is evenly coated. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours).
  3. Preheat oven to 400°F (200°C).
  4. Arrange the marinated chicken breasts in a baking dish. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) using a meat thermometer.
  5. Remove the chicken from the oven and top each breast with slices of fresh mozzarella cheese.
  6. Return the baking dish to the oven and broil for 1-2 minutes, or until the mozzarella cheese is melted and bubbly (watch carefully to prevent burning!).
  7. Garnish with fresh basil (if desired) and serve immediately.
