Ingredients:

  • 1 lb lean ground beef
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 24 oz marinara sauce
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes
  • salt and black pepper to taste
  • 20 oz refrigerated cheese-filled tortellini
  • 2 cups shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with non-stick spray or olive oil.
  2. In a large skillet over medium-high heat, brown the ground beef (or sausage) and diced onions. Cook until the meat is no longer pink and onions are translucent. Drain any excess grease.
  3. Stir in the minced garlic and cook for 1 minute until fragrant. Add the marinara sauce, Italian seasoning, salt, and pepper. Lower the heat and let the sauce simmer for 5–10 minutes.
  4. While the sauce simmers, bring a pot of salted water to a boil. Cook the refrigerated tortellini for 2 minutes less than the package instructions. Drain well.
  5. Gently fold the par-boiled tortellini into the skillet with the meat sauce until every piece is coated. Transfer the mixture into the prepared baking dish.
  6. Evenly sprinkle the shredded mozzarella and grated Parmesan over the top.
  7. Place in the oven and bake for 20–25 minutes until the edges are bubbling and the cheese is golden brown.
  8. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
