Ingredients:
- 1 lb lean ground beef
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 24 oz marinara sauce
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes
- salt and black pepper to taste
- 20 oz refrigerated cheese-filled tortellini
- 2 cups shredded mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with non-stick spray or olive oil.
- In a large skillet over medium-high heat, brown the ground beef (or sausage) and diced onions. Cook until the meat is no longer pink and onions are translucent. Drain any excess grease.
- Stir in the minced garlic and cook for 1 minute until fragrant. Add the marinara sauce, Italian seasoning, salt, and pepper. Lower the heat and let the sauce simmer for 5–10 minutes.
- While the sauce simmers, bring a pot of salted water to a boil. Cook the refrigerated tortellini for 2 minutes less than the package instructions. Drain well.
- Gently fold the par-boiled tortellini into the skillet with the meat sauce until every piece is coated. Transfer the mixture into the prepared baking dish.
- Evenly sprinkle the shredded mozzarella and grated Parmesan over the top.
- Place in the oven and bake for 20–25 minutes until the edges are bubbling and the cheese is golden brown.
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
