Ingredients:

  • 4 large Granny Smith or Honeycrisp apples (approx. 900g), cored and sliced into 1/4-inch wedges
  • 1 tbsp lemon juice
  • 2 tbsp melted coconut oil
  • 2 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp sea salt
  • 1 tsp cornstarch

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper.
  2. Toss the sliced apples with lemon juice in a large bowl to prevent oxidation.
  3. In a small bowl, whisk together melted coconut oil, maple syrup, cinnamon, ginger, salt, and cornstarch until smooth.
  4. Pour the glaze over the apples and toss gently until every slice is fully coated.
  5. Spread the apples in a single layer on the prepared baking sheet.
  6. Roast for 25–30 minutes, flipping once halfway through, until apples are tender and the syrup has thickened into a glaze.
