Ingredients:
- 4 large Granny Smith or Honeycrisp apples (approx. 800g)
- 2 tbsp melted coconut oil
- 1 tsp lemon juice
- 1 tsp ground cinnamon
- 1/2 cup old fashioned rolled oats
- 2 tbsp pure maple syrup
- 1 tbsp softened coconut oil
- 1/4 tsp sea salt
- 2 tbsp chopped pecans
Instructions:
- Preheat your oven to 350°F (175°C).
- Wash the apples and remove the stems. Use a corer to remove the center, leaving about 1/2 inch of the bottom intact.
- Brush the insides and outsides of the apples with melted coconut oil and lemon juice, then dust the interior cavity with 1/2 tsp ground cinnamon.
- In a small bowl, combine the rolled oats, maple syrup, softened coconut oil, remaining cinnamon, and salt. Stir until moist and clumpy.
- Fold in the chopped pecans.
- Spoon the oat mixture into each apple cavity, pressing down gently.
- Place apples upright in a 9x9 inch baking dish and pour 2-3 tbsp of water into the bottom of the dish.
- Bake for 30 minutes, or until the apples are tender and the topping is mahogany-colored.
