Ingredients:

  • 4 large Granny Smith or Honeycrisp apples (approx. 800g)
  • 2 tbsp melted coconut oil
  • 1 tsp lemon juice
  • 1 tsp ground cinnamon
  • 1/2 cup old fashioned rolled oats
  • 2 tbsp pure maple syrup
  • 1 tbsp softened coconut oil
  • 1/4 tsp sea salt
  • 2 tbsp chopped pecans

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Wash the apples and remove the stems. Use a corer to remove the center, leaving about 1/2 inch of the bottom intact.
  3. Brush the insides and outsides of the apples with melted coconut oil and lemon juice, then dust the interior cavity with 1/2 tsp ground cinnamon.
  4. In a small bowl, combine the rolled oats, maple syrup, softened coconut oil, remaining cinnamon, and salt. Stir until moist and clumpy.
  5. Fold in the chopped pecans.
  6. Spoon the oat mixture into each apple cavity, pressing down gently.
  7. Place apples upright in a 9x9 inch baking dish and pour 2-3 tbsp of water into the bottom of the dish.
  8. Bake for 30 minutes, or until the apples are tender and the topping is mahogany-colored.
