Ingredients:

  • 1 pound (450 g) turkey breast cutlets (thinly sliced)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (15 ml)
  • 1 cup (100 g) shredded mozzarella cheese
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1/2 cup (120 ml) chicken broth
  • 1/4 cup (60 g) cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or Italian seasoning
  • 1/4 cup (15 g) fresh parsley, chopped
  • Additional shredded mozzarella cheese (optional)
  • Fresh herbs for garnish (optional)

Instructions:

  1. In a mixing bowl, combine shredded mozzarella, grated Parmesan, cream cheese, garlic powder, thyme, and parsley. Mix until well combined. Gradually add chicken broth until the mixture is cohesive but not too wet.
  2. Lay the turkey cutlets flat on a clean surface and season both sides with salt and pepper. Place a generous spoonful of the cheesy stuffing onto one end of each turkey cutlet.
  3. Carefully roll up the turkey from the stuffing end, securing it with toothpicks or tying with kitchen twine. Repeat for all cutlets and chill for 30 minutes to help maintain shape.
  4. Preheat the oven to 375°F (190°C). In a baking dish, arrange the roll-ups seam-side down, brush with olive oil, and season with additional pepper. If desired, sprinkle more mozzarella on top.
  5. Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C) and the turkey is golden brown. Let rest for a few minutes before serving.
