Ingredients:
- 2 cups (240 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (240 ml) buttermilk, room temperature
- ½ cup (120 ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (300 g) fresh strawberries, hulled and chopped
- ½ cup (100 g) granulated sugar
- 1 tablespoon cornstarch
- 8 oz (226 g) cream cheese, softened
- 1 cup (120 g) powdered sugar
- 1 teaspoon vanilla extract
- 1 egg
Instructions:
- Preheat the oven to 350°F (175°C) and grease and flour the baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, oil, eggs, and vanilla until combined.
- Gradually add the wet ingredients to dry ingredients, mixing until just combined.
- In a medium bowl, combine strawberries, sugar, and cornstarch; toss until strawberries are coated.
- In a mixing bowl, beat together cream cheese, powdered sugar, vanilla, and egg until smooth.
- Pour half the batter into the prepared pan, evenly distribute the strawberry mixture over the batter.
- Drop spoonfuls of the creamy swirl mixture on top, then pour the remaining batter over.
- Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for at least 15 minutes before slicing. Serve warm or at room temperature.
