Ingredients:

  • 4 pieces Perdue chicken (thighs or breasts) (about 1.5 lbs or 680g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon kosher salt (5g)
  • ½ teaspoon black pepper (2g)
  • 1 cup fresh breadcrumbs (100g)
  • 1 tablespoon fresh parsley, chopped (15g)
  • 1 tablespoon fresh basil, chopped (15g)
  • 1 tablespoon fresh thyme, chopped (15g)
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 1 teaspoon lemon juice (5ml)
  • 2 tablespoons grated Parmesan cheese (30g)
  • 1 teaspoon paprika (5g)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine olive oil, salt, and pepper. Coat the chicken pieces with the mixture.
  3. In a separate bowl, mix breadcrumbs, parsley, basil, thyme, garlic, lemon zest, lemon juice, Parmesan, and paprika.
  4. Dip each piece of chicken into the breadcrumb mixture, pressing gently to adhere.
  5. Place the crusted chicken pieces in a baking dish.
  6. Bake in the preheated oven for 35-40 minutes or until the chicken is golden brown and the internal temperature reaches 165°F (75°C).
  7. Allow to rest for 5 minutes before serving.
