Ingredients:
- 4 pieces Perdue chicken (thighs or breasts) (about 1.5 lbs or 680g)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon kosher salt (5g)
- ½ teaspoon black pepper (2g)
- 1 cup fresh breadcrumbs (100g)
- 1 tablespoon fresh parsley, chopped (15g)
- 1 tablespoon fresh basil, chopped (15g)
- 1 tablespoon fresh thyme, chopped (15g)
- 2 cloves garlic, minced
- Zest of 1 lemon
- 1 teaspoon lemon juice (5ml)
- 2 tablespoons grated Parmesan cheese (30g)
- 1 teaspoon paprika (5g)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a bowl, combine olive oil, salt, and pepper. Coat the chicken pieces with the mixture.
- In a separate bowl, mix breadcrumbs, parsley, basil, thyme, garlic, lemon zest, lemon juice, Parmesan, and paprika.
- Dip each piece of chicken into the breadcrumb mixture, pressing gently to adhere.
- Place the crusted chicken pieces in a baking dish.
- Bake in the preheated oven for 35-40 minutes or until the chicken is golden brown and the internal temperature reaches 165°F (75°C).
- Allow to rest for 5 minutes before serving.
