Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- ¾ cup warm water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 8 ounces fresh mozzarella cheese, sliced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach leaves, roughly chopped
- ¼ cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: Red pepper flakes for spice
Instructions:
- In a mixing bowl, combine warm water, sugar, and yeast. Let it sit until foamy (about 5 minutes).
- Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface until smooth (about 5-7 minutes).
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 30 minutes.
- Preheat the oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
- Slice the mozzarella and halve the cherry tomatoes.
- In a bowl, combine spinach, basil, olive oil, salt, and pepper.
- Roll out the dough on a floured surface to desired thickness.
- Transfer to a baking sheet or heated stone, then layer with mozzarella, tomatoes, and spinach mixture.
- Bake for 12-15 minutes or until the crust is golden and cheese is bubbly.
- Allow to cool for a few minutes, then slice and serve.
