Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • ¾ cup warm water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 8 ounces fresh mozzarella cheese, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach leaves, roughly chopped
  • ¼ cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Red pepper flakes for spice

Instructions:

  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit until foamy (about 5 minutes).
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface until smooth (about 5-7 minutes).
  4. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 30 minutes.
  5. Preheat the oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
  6. Slice the mozzarella and halve the cherry tomatoes.
  7. In a bowl, combine spinach, basil, olive oil, salt, and pepper.
  8. Roll out the dough on a floured surface to desired thickness.
  9. Transfer to a baking sheet or heated stone, then layer with mozzarella, tomatoes, and spinach mixture.
  10. Bake for 12-15 minutes or until the crust is golden and cheese is bubbly.
  11. Allow to cool for a few minutes, then slice and serve.
