Ingredients:

  • 12 mini bagels (about 1 inch in diameter)
  • 4 large eggs (240 g)
  • ½ cup shredded cheddar cheese (60 g)
  • 4 oz cooked bacon, chopped (or 1 cup sautéed vegetables) (113 g)
  • ¼ cup milk (60 ml)
  • Salt and black pepper to taste
  • Cooking spray or 1 tbsp olive oil (15 ml)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Slice mini bagels in half horizontally and arrange them cut-side up on a baking sheet lined with parchment paper.
  3. In a skillet, heat cooking spray or olive oil over medium heat. In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour the egg mixture into the skillet and scramble until just set, about 4 minutes.
  4. Add chopped bacon (or vegetables) and cheese to the scrambled eggs, mixing to combine. Spoon the egg mixture generously onto the bottom half of each mini bagel.
  5. Place the top half of the mini bagels on the filling.
  6. Place the baking sheet in the preheated oven and bake for 10-12 minutes, until the bagels are toasted and the cheese is melted.
  7. Remove from the oven and sprinkle with fresh chives or green onions if desired. Serve warm.
