Ingredients:
- 12 mini bagels (about 1 inch in diameter)
- 4 large eggs (240 g)
- ½ cup shredded cheddar cheese (60 g)
- 4 oz cooked bacon, chopped (or 1 cup sautéed vegetables) (113 g)
- ¼ cup milk (60 ml)
- Salt and black pepper to taste
- Cooking spray or 1 tbsp olive oil (15 ml)
Instructions:
- Preheat your oven to 375°F (190°C).
- Slice mini bagels in half horizontally and arrange them cut-side up on a baking sheet lined with parchment paper.
- In a skillet, heat cooking spray or olive oil over medium heat. In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour the egg mixture into the skillet and scramble until just set, about 4 minutes.
- Add chopped bacon (or vegetables) and cheese to the scrambled eggs, mixing to combine. Spoon the egg mixture generously onto the bottom half of each mini bagel.
- Place the top half of the mini bagels on the filling.
- Place the baking sheet in the preheated oven and bake for 10-12 minutes, until the bagels are toasted and the cheese is melted.
- Remove from the oven and sprinkle with fresh chives or green onions if desired. Serve warm.
