Ingredients:

  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup (240ml) whole milk
  • 6 cups (720g) powdered sugar
  • 1 ½ cups (340g) unsalted butter, softened
  • ¼ cup (60ml) heavy cream
  • 1 tsp vanilla extract
  • Food coloring (pink, yellow, black, and white)
  • Edible glitter (optional)
  • Hello Kitty figurines or edible images (if desired)

Instructions:

  1. Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a mixing bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Gradually add flour mixture alternating with milk; mix until smooth.
  6. Divide the batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool in pans for 10 minutes before transferring to a cooling rack.
  8. In a mixing bowl, beat together butter and powdered sugar until smooth, then add cream and vanilla; beat until fluffy.
  9. Divide frosting into bowls and color with food coloring as desired.
  10. Level the cooled cakes with a serrated knife, then place one cake layer on serving plate and spread frosting on top.
  11. Place the second layer on top and frost the top and sides of the cake.
  12. Use additional colored frosting to create Hello Kitty features and add edible glitter or figurines as desired.
