Ingredients:
- 2 ½ cups (315g) all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup (226g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup (240ml) whole milk
- 6 cups (720g) powdered sugar
- 1 ½ cups (340g) unsalted butter, softened
- ¼ cup (60ml) heavy cream
- 1 tsp vanilla extract
- Food coloring (pink, yellow, black, and white)
- Edible glitter (optional)
- Hello Kitty figurines or edible images (if desired)
Instructions:
- Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In a mixing bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- Gradually add flour mixture alternating with milk; mix until smooth.
- Divide the batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool in pans for 10 minutes before transferring to a cooling rack.
- In a mixing bowl, beat together butter and powdered sugar until smooth, then add cream and vanilla; beat until fluffy.
- Divide frosting into bowls and color with food coloring as desired.
- Level the cooled cakes with a serrated knife, then place one cake layer on serving plate and spread frosting on top.
- Place the second layer on top and frost the top and sides of the cake.
- Use additional colored frosting to create Hello Kitty features and add edible glitter or figurines as desired.
