Ingredients:
- 2 cups (240g) all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) buttermilk
- 2 cups (about 3 medium) fresh apples, peeled and diced
- ¼ cup (30g) chopped walnuts or pecans (optional)
- 1 tsp cinnamon-sugar mixture (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, beat softened butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Gradually add the dry mixture to the wet ingredients, alternating with buttermilk until just combined.
- Gently fold in the diced apples.
- Grease the cake pan and pour the batter in, smoothing the top with a spatula.
- Sprinkle with nuts and cinnamon-sugar mixture if desired.
- Bake for 45-50 minutes, or until a toothpick comes out clean around the edges.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
