Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) buttermilk
  • 2 cups (about 3 medium) fresh apples, peeled and diced
  • ¼ cup (30g) chopped walnuts or pecans (optional)
  • 1 tsp cinnamon-sugar mixture (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, beat softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Gradually add the dry mixture to the wet ingredients, alternating with buttermilk until just combined.
  6. Gently fold in the diced apples.
  7. Grease the cake pan and pour the batter in, smoothing the top with a spatula.
  8. Sprinkle with nuts and cinnamon-sugar mixture if desired.
  9. Bake for 45-50 minutes, or until a toothpick comes out clean around the edges.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
