Ingredients:

  • 4 cups day-old bread (cubed, about 400 grams)
  • 1 cup unsalted butter (226 grams)
  • 1 large onion (diced)
  • 2 stalks celery (diced)
  • 2 cloves garlic (minced)
  • 2 teaspoons dried sage (about 5 grams)
  • 1 teaspoon dried thyme (about 2 grams)
  • 1 teaspoon salt (about 6 grams)
  • 1/2 teaspoon black pepper (about 1 gram)
  • 2 cups chicken or vegetable broth (480 mL)
  • 1/2 cup fresh parsley (chopped, about 15 grams)
  • 2 large eggs (lightly beaten)

Instructions:

  1. Cube the day-old bread into small pieces and place in a large bowl. (Optional) Allow to sit out for 30 minutes to further dry.
  2. Melt butter in a skillet over medium heat. Add onion and celery, and sauté until softened (about 5-7 minutes). Stir in minced garlic, sage, thyme, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Pour the sautéed mixture over the bread cubes. Mix in chopped parsley, broth, and beaten eggs until everything is evenly combined.
  4. Spoon the stuffing mixture into a greased baking dish, pressing gently but not too compactly.
  5. Cover with foil and bake at 350°F (175°C) for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown.
