Ingredients:
- 2 cups all-purpose flour (240 g)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar (50 g)
- 1/2 cup unsalted butter, cold and cubed (113 g)
- 3/4 cup buttermilk (180 ml)
- 2 cups mixed berries (e.g., blueberries, raspberries, strawberries) (300 g)
- 1/3 cup granulated sugar (67 g)
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions:
- In a bowl, combine flour, baking powder, salt, and sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in buttermilk until just combined. Chill the dough for 30 minutes.
- In a separate bowl, toss mixed berries with sugar, cornstarch, vanilla, and lemon zest. Let sit for 10 minutes to macerate.
- Preheat the oven to 375°F (190°C). Roll out 2/3 of the dough on a floured surface into a circle, then fit it into the pie dish.
- Fill with the berry mixture.
- Roll out the remaining dough for the top crust, then place it over the filling. Cut slits for steam to escape.
- Crimp edges to seal and place pie on a baking sheet.
- Bake for 30-35 minutes, until crust is golden and filling is bubbly.
- Allow to cool for at least 15 minutes before slicing.
