Ingredients:

  • 2 cups all-purpose flour (240 g)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (50 g)
  • 1/2 cup unsalted butter, cold and cubed (113 g)
  • 3/4 cup buttermilk (180 ml)
  • 2 cups mixed berries (e.g., blueberries, raspberries, strawberries) (300 g)
  • 1/3 cup granulated sugar (67 g)
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions:

  1. In a bowl, combine flour, baking powder, salt, and sugar.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in buttermilk until just combined. Chill the dough for 30 minutes.
  4. In a separate bowl, toss mixed berries with sugar, cornstarch, vanilla, and lemon zest. Let sit for 10 minutes to macerate.
  5. Preheat the oven to 375°F (190°C). Roll out 2/3 of the dough on a floured surface into a circle, then fit it into the pie dish.
  6. Fill with the berry mixture.
  7. Roll out the remaining dough for the top crust, then place it over the filling. Cut slits for steam to escape.
  8. Crimp edges to seal and place pie on a baking sheet.
  9. Bake for 30-35 minutes, until crust is golden and filling is bubbly.
  10. Allow to cool for at least 15 minutes before slicing.
