Ingredients:

  • 4 medium globe artichokes (approx. 1 pound / 450 grams each)
  • 1 lemon (for juicing)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 2 cloves garlic, minced
  • 1/2 cup mayonnaise (120g) (optional, for dipping)
  • Optional fresh herbs (e.g., parsley or dill, for garnish)

Instructions:

  1. Trim the stem of each artichoke to about 1 inch. Remove the tough outer leaves at the base and snip the tips of the remaining leaves. Cut the top inch off each artichoke with a knife. Rub cuts with lemon to prevent browning.
  2. In a large pot, bring water to a boil; add lemon juice, olive oil, salt, and garlic. Place artichokes upright in the pot (you can use a steamer basket if desired). Cover and simmer for 30-40 minutes, or until leaves pull away easily.
  3. Mix mayonnaise with herbs or spices of choice in a bowl, if using.
  4. Transfer artichokes to a platter. Serve warm with dipping sauce on the side.
