Ingredients:
- 4 tablespoons (60 ml) Apple Cider Vinegar (unfiltered preferred, for extra flavour)
- 2 tablespoons (30 ml) Extra Virgin Olive Oil (good quality, fruity flavour)
- 1 tablespoon (15 ml) Honey (or maple syrup for vegan option)
- 1 teaspoon (5 ml) Dijon Mustard (smooth or grainy)
- 1/4 teaspoon (1.25 ml) Sea Salt (or to taste)
- 1/8 teaspoon (0.625 ml) Black Pepper (freshly ground)
Instructions:
- In a small mixing bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper.
- Whisk vigorously until all ingredients are fully emulsified and the dressing appears slightly thickened and opaque.
- Taste the apple cider vinaigrette and adjust seasoning as needed. Add more honey for sweetness, vinegar for tang, or salt and pepper to taste.
- Transfer the vinaigrette to a jar or airtight container. It can be stored in the refrigerator for up to 1 week.
