Ingredients:

  • 4 tablespoons (60 ml) Apple Cider Vinegar (unfiltered preferred, for extra flavour)
  • 2 tablespoons (30 ml) Extra Virgin Olive Oil (good quality, fruity flavour)
  • 1 tablespoon (15 ml) Honey (or maple syrup for vegan option)
  • 1 teaspoon (5 ml) Dijon Mustard (smooth or grainy)
  • 1/4 teaspoon (1.25 ml) Sea Salt (or to taste)
  • 1/8 teaspoon (0.625 ml) Black Pepper (freshly ground)

Instructions:

  1. In a small mixing bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper.
  2. Whisk vigorously until all ingredients are fully emulsified and the dressing appears slightly thickened and opaque.
  3. Taste the apple cider vinaigrette and adjust seasoning as needed. Add more honey for sweetness, vinegar for tang, or salt and pepper to taste.
  4. Transfer the vinaigrette to a jar or airtight container. It can be stored in the refrigerator for up to 1 week.
