Ingredients:

  • 1/2 cup (60g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 ½ cups (360ml) whole milk
  • 4 large eggs
  • 4 tablespoons (57g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 medium apples (Granny Smith, Honeycrisp, or mix)
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar (for apples)
  • 1/4 tsp ground cinnamon (for apples)
  • extra flour for dusting apples

Instructions:

  1. Peel, core, and thinly slice the apples. Toss with lemon juice, 1 tablespoon sugar, cinnamon and extra flour to prevent sogginess. Set aside.
  2. In the food processor, combine the flour, sugar, cinnamon, nutmeg, and salt. Pulse briefly to mix.
  3. Add the milk, eggs, melted butter, and vanilla extract to the food processor. Process until smooth, about 30 seconds.
  4. Arrange the sliced apples evenly in the bottom of the pie plate.
  5. Carefully pour the custard mixture over the apples, ensuring they are evenly distributed.
  6. Bake in a preheated oven at 350°F (175°C) for 45-55 minutes, or until the top is golden brown and the custard is set, but still has a slight jiggle in the center. A toothpick inserted near the center should come out mostly clean.
  7. Let the pie cool completely on a wire rack before slicing and serving. The pie will continue to set as it cools.
