Ingredients:
- 1 1/4 cups (150g) all-purpose flour, plus more for dusting
- 1/2 teaspoon salt
- 1/2 cup (1 stick, 113g) unsalted butter, very cold and cubed
- 1/4 cup (60ml) ice water, plus more if needed
- 6 medium apples (such as Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced (about 6 cups sliced)
- 1/4 cup (50g) granulated sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons lemon juice
- 2 teaspoons apple pie spice (10ml)
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, cut into small pieces
- 3/4 cup (90g) all-purpose flour
- 1/2 cup (100g) packed light brown sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick, 113g) unsalted butter, very cold and cubed
Instructions:
- Make the Crust: Combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Form into a disc, wrap in plastic wrap, and chill.
- Prepare the Apple Filling: In a large bowl, combine sliced apples, sugar, flour, lemon juice, apple pie spice, and salt. Toss to coat. Dot with butter.
- Make the Crumble Topping: In a separate bowl, combine flour, brown sugar, and salt. Cut in the cold butter until the mixture forms coarse crumbs.
- Assemble the Pie: Roll out the chilled dough on a lightly floured surface and transfer it to the pie plate. Trim and crimp the edges.
- Add the Filling and Topping: Pour the apple filling into the pie crust. Sprinkle the crumble topping evenly over the apples.
- Bake the Pie: Bake in a preheated oven until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with foil.
- Cool and Serve: Let the pie cool completely before slicing and serving. This helps the filling set.
