Ingredients:

  • 2 medium apples (such as Honeycrisp, Gala, or Fuji), cored (approximately 400g / 14 oz)
  • 2 tablespoons lemon juice (30 ml / 1 fl oz)
  • 1/4 teaspoon ground cinnamon (1 g)
  • Pinch of nutmeg (optional)
  • 2 tablespoons water (30 ml / 1 fl oz)
  • 1/4 cup rolled oats (25g / 0.9 oz)
  • 2 tablespoons whole wheat flour (16g / 0.5 oz)
  • 1 tablespoon brown sugar substitute (such as Monk Fruit or Stevia) (12g / 0.4 oz)
  • 1/4 teaspoon ground cinnamon (1 g)
  • 2 tablespoons unsalted butter, cold and cut into small cubes (28g / 1 oz)
  • Pinch of salt

Instructions:

  1. Preheat oven to 375°F (190°C / Gas Mark 5).
  2. Core the apples, leaving the bottom intact. Brush the cut surfaces with lemon juice to prevent browning.
  3. Place the apples in the baking dish. Sprinkle the inside of each apple with cinnamon and nutmeg (if using). Add 2 tablespoons of water to the bottom of the dish.
  4. In a small bowl, combine rolled oats, whole wheat flour, brown sugar substitute, cinnamon, and salt.
  5. Cut in the cold butter using a pastry blender, fork, or your fingers until the mixture resembles coarse crumbs.
  6. Spoon the crumble mixture evenly into the cored centers of each apple, mounding it slightly.
  7. Bake for 30-35 minutes, or until the apples are tender and the crumble topping is golden brown.
  8. Let cool slightly before serving.
