Ingredients:
- 2 medium apples (such as Honeycrisp, Gala, or Fuji), cored (approximately 400g / 14 oz)
- 2 tablespoons lemon juice (30 ml / 1 fl oz)
- 1/4 teaspoon ground cinnamon (1 g)
- Pinch of nutmeg (optional)
- 2 tablespoons water (30 ml / 1 fl oz)
- 1/4 cup rolled oats (25g / 0.9 oz)
- 2 tablespoons whole wheat flour (16g / 0.5 oz)
- 1 tablespoon brown sugar substitute (such as Monk Fruit or Stevia) (12g / 0.4 oz)
- 1/4 teaspoon ground cinnamon (1 g)
- 2 tablespoons unsalted butter, cold and cut into small cubes (28g / 1 oz)
- Pinch of salt
Instructions:
- Preheat oven to 375°F (190°C / Gas Mark 5).
- Core the apples, leaving the bottom intact. Brush the cut surfaces with lemon juice to prevent browning.
- Place the apples in the baking dish. Sprinkle the inside of each apple with cinnamon and nutmeg (if using). Add 2 tablespoons of water to the bottom of the dish.
- In a small bowl, combine rolled oats, whole wheat flour, brown sugar substitute, cinnamon, and salt.
- Cut in the cold butter using a pastry blender, fork, or your fingers until the mixture resembles coarse crumbs.
- Spoon the crumble mixture evenly into the cored centers of each apple, mounding it slightly.
- Bake for 30-35 minutes, or until the apples are tender and the crumble topping is golden brown.
- Let cool slightly before serving.
