Ingredients:
- 2 cups (300g) peeled and diced apples
- 3 tbsp (42g) unsalted butter
- 1/4 cup (50g) packed light brown sugar
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 2 cups (480ml) heavy whipping cream, cold
- 1 can (14 oz / 397g) sweetened condensed milk
- 1 tsp (5ml) vanilla extract
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
Instructions:
- Melt the butter in a skillet over medium heat. Add the diced apples, brown sugar, cinnamon, and salt. Stir frequently for 8–10 minutes until the apples are tender and coated in a mahogany-colored syrup. Remove from heat and let cool completely.
- In a chilled bowl, beat the heavy whipping cream until stiff peaks form.
- In a separate bowl, stir together the sweetened condensed milk, vanilla, cinnamon, and salt.
- Gently fold the whipped cream into the condensed milk mixture using a spatula until no streaks remain.
- Pour half of the cream base into a freezer container. Spoon over half of the cooled apple mixture. Top with the remaining cream and the rest of the apples.
- Use a knife to gently swirl the apples into the cream without overmixing.
- Cover the surface of the ice cream with plastic wrap touching the cream and freeze for at least 6 hours or until firm.
