Ingredients:
- 2 cups (180g) rolled oats
- 1 tbsp (8g) ground cinnamon
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 1/2 cups (360ml) unsweetened almond milk
- 1/3 cup (80ml) maple syrup
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 medium (300g) Granny Smith apples, peeled and diced
- 1 tbsp (15g) coconut oil
Instructions:
- Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan with coconut oil or line it with parchment paper.
- In a large mixing bowl, whisk together the almond milk, maple syrup, egg, and vanilla extract until the mixture is smooth.
- Stir in the rolled oats, ground cinnamon, baking powder, and salt.
- Gently fold in the diced apples until evenly distributed.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 30–35 minutes, or until the edges are golden-brown and the center is set but slightly springy.
