Ingredients:

  • 2 cups (180g) rolled oats
  • 1 tbsp (8g) ground cinnamon
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 1 1/2 cups (360ml) unsweetened almond milk
  • 1/3 cup (80ml) maple syrup
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 medium (300g) Granny Smith apples, peeled and diced
  • 1 tbsp (15g) coconut oil

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan with coconut oil or line it with parchment paper.
  2. In a large mixing bowl, whisk together the almond milk, maple syrup, egg, and vanilla extract until the mixture is smooth.
  3. Stir in the rolled oats, ground cinnamon, baking powder, and salt.
  4. Gently fold in the diced apples until evenly distributed.
  5. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  6. Bake for 30–35 minutes, or until the edges are golden-brown and the center is set but slightly springy.
