Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened to room temperature (227g)
  • 4 cups (454g) powdered sugar, sifted (US: Confectioners' sugar, UK: Icing sugar)
  • 2-4 tablespoons (30-60ml) milk or heavy cream, plus more if needed to adjust consistency
  • 1-2 teaspoons vanilla extract (5-10ml)
  • Pinch of salt (approx. 1/8 teaspoon)

Instructions:

  1. Ensure the butter is softened but not melted. Cut into cubes.
  2. Beat the softened butter in the mixer on medium speed until light and fluffy (about 3-5 minutes). Scrape down the bowl occasionally.
  3. With the mixer on low speed, gradually add the sifted powdered sugar, one cup at a time, allowing each addition to fully incorporate before adding the next.
  4. Add 2 tablespoons of milk (or cream), vanilla extract, and salt. Mix on low speed until just combined.
  5. Increase the mixer speed to medium-high and beat for 3-5 minutes, or until the buttercream is light, fluffy, and ultra-smooth. Add more milk (1 tablespoon at a time) if needed to achieve the desired consistency.
  6. Use a spatula to scrape down the sides and bottom of the bowl to ensure even mixing.
  7. Add Gel food coloring and flavors, if desired. Mix slowly, for about 1-2 minutes.
