Ingredients:

  • 1 lb medium zucchini, cut into spears or slices
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Wash and dry the zucchini thoroughly. Note: Water on the skin prevents browning.
  2. Quarter the zucchini lengthwise for spears or cut into 1/2 inch rounds for slices to ensure consistency.
  3. In a large bowl, combine the zucchini with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  4. Toss gently until every surface is glistening. Note: Don't overmix or the zucchini will release water too early.
  5. Arrange the zucchini in a single layer in the air fryer basket to ensure proper air circulation.
  6. Cook at 400°F (200°C) for 10 minutes.
  7. Shake the basket halfway through until the edges are mahogany colored and the skins look slightly blistered.
  8. Remove immediately and let rest for 1 minute before serving.
