Ingredients:
- 1.5 lbs boneless skinless chicken breasts
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 cup all purpose flour
- 2 large eggs, beaten
- 1 cup Panko breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried Italian seasoning
- 1 spray avocado oil cooking spray
- 1/2 cup low sugar marinara sauce
- 1/2 cup shredded part skim mozzarella cheese
- 4 leaves fresh basil
Instructions:
- Place the 1.5 lbs chicken breasts between parchment paper and pound them to a 1/2 inch thickness until they are perfectly even.
- Set up three bowls: flour with salt/pepper, beaten eggs, and the Panko/Parmesan/herb mixture.
- Dredge each piece in flour, dip in egg, and then press firmly into the Panko mix until every crevice is covered.
- Place the chicken in the basket and apply a generous spray of avocado oil. Cook at 400°F for 8 minutes until the exterior is golden and crackling.
- Carefully flip the chicken halfway through the 8 minute cycle to ensure the bottom gets as much airflow as the top.
- Spoon 2 tablespoons of marinara onto each breast and top with mozzarella.
- Cook for an additional 3-4 minutes until the cheese is bubbling and slightly browned.
- Let the chicken rest for 2 minutes to allow the juices to redistribute, then chiffonade the basil and scatter it over the top until the aroma hits your nose.
