Ingredients:

  • 1.5 lbs boneless skinless chicken breasts
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 1 spray avocado oil cooking spray
  • 1/2 cup low sugar marinara sauce
  • 1/2 cup shredded part skim mozzarella cheese
  • 4 leaves fresh basil

Instructions:

  1. Place the 1.5 lbs chicken breasts between parchment paper and pound them to a 1/2 inch thickness until they are perfectly even.
  2. Set up three bowls: flour with salt/pepper, beaten eggs, and the Panko/Parmesan/herb mixture.
  3. Dredge each piece in flour, dip in egg, and then press firmly into the Panko mix until every crevice is covered.
  4. Place the chicken in the basket and apply a generous spray of avocado oil. Cook at 400°F for 8 minutes until the exterior is golden and crackling.
  5. Carefully flip the chicken halfway through the 8 minute cycle to ensure the bottom gets as much airflow as the top.
  6. Spoon 2 tablespoons of marinara onto each breast and top with mozzarella.
  7. Cook for an additional 3-4 minutes until the cheese is bubbling and slightly browned.
  8. Let the chicken rest for 2 minutes to allow the juices to redistribute, then chiffonade the basil and scatter it over the top until the aroma hits your nose.
