Ingredients:
- 1/4 cup Dijon Mustard
- 2 Tablespoons Honey
- 1 Tablespoon Apple Cider Vinegar
- 1/4 cup Full Fat Mayonnaise
- 1/4 cup Light/Neutral Olive Oil
- 1/2 teaspoon Fine Sea Salt
- 1/4 teaspoon Freshly Ground Black Pepper
Instructions:
- Combine Base Flavours: In a medium mixing bowl, vigorously whisk together the Dijon mustard, honey, apple cider vinegar, mayonnaise, salt, and pepper until fully uniform.
- Emulsify the Oil: Very slowly begin pouring the olive oil into the bowl while continuously and rapidly whisking the mixture.
- Check Consistency: Continue whisking until all the oil is incorporated and the dressing has visibly thickened and emulsified. It should coat the back of a spoon nicely.
- Taste and Adjust: Taste the dressing. If it’s too sharp, whisk in a touch more honey. If it’s too sweet, add a tiny splash more vinegar. Adjust salt and pepper as needed.
- Chill (Recommended): For the best flavour melding, cover the bowl or transfer the dressing to an airtight jar and refrigerate for at least 30 minutes before serving.
