Ingredients:

  • 1 lb (450g) Pasta (Spaghetti, Linguine, or Penne)
  • 2 tbsp (30ml) Olive Oil
  • 2 cloves Garlic, minced
  • 1 (28oz/800g) can Crushed Tomatoes
  • 1 tsp (5ml) Dried Oregano
  • ½ tsp (2.5ml) Red Pepper Flakes (optional)
  • ½ cup (120ml) Vegetable Broth (or water)
  • Salt and Black Pepper to taste
  • 1 cup (25g) Fresh Basil Leaves, roughly chopped
  • ½ cup (50g) Grated Parmesan Cheese (optional)

Instructions:

  1. Cook pasta according to package directions. Drain, reserving about ½ cup (120ml) of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant (about 30 seconds).
  3. Stir in crushed tomatoes, oregano, red pepper flakes (if using), and vegetable broth. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Season with salt and pepper to taste.
  5. Add cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water.
  6. Stir in fresh basil and Parmesan cheese (if using).
  7. Serve immediately.
