Ingredients:
- 1 lb (450g) Pasta (Spaghetti, Linguine, or Penne)
- 2 tbsp (30ml) Olive Oil
- 2 cloves Garlic, minced
- 1 (28oz/800g) can Crushed Tomatoes
- 1 tsp (5ml) Dried Oregano
- ½ tsp (2.5ml) Red Pepper Flakes (optional)
- ½ cup (120ml) Vegetable Broth (or water)
- Salt and Black Pepper to taste
- 1 cup (25g) Fresh Basil Leaves, roughly chopped
- ½ cup (50g) Grated Parmesan Cheese (optional)
Instructions:
- Cook pasta according to package directions. Drain, reserving about ½ cup (120ml) of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant (about 30 seconds).
- Stir in crushed tomatoes, oregano, red pepper flakes (if using), and vegetable broth. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Add cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water.
- Stir in fresh basil and Parmesan cheese (if using).
- Serve immediately.
